


I made some chicken and refried bean tostadas.
Brown the chicken until half cooked add onion, garlic, tomatoes, salt, pepper, a pinch of oregano, marjoram, thyme and finish cooking.
Fry pinto beans until medium firm consistency. I used a can of pinto beans that are prefried.
Cut chicken into small pieces. Dice lettuce, onion, and tomatoes. If I had avocados I would slice them thin.
Shallow fry corn tortillas, remove and lightly salt.
Spread beans on the tostadas, top with chicken and then vegetables.
If you have queso fresco, crema and salsa you can add that last.
Enjoy!
PS. Yeah I nearly burnt those tostadas. :( Luckily they only tasted slightly bitter.

Never heard of “Tostadas” but daaaamn, seems like I’m missing something insanely delicious. This looks mouthwatering good.
Tostadas are an excellent crunchy delivery system for everything else.
Haha thanks! For some reason tostadas aren’t as popular outside of Mexico unless you have proximity to Mexicans. They are very simple but also very good.
People in the US sometimes call them chalupas but those are actually something else. Here are some authentic chicken tostada recipes from books my mother has that are older than me.
"CHICKEN TOSTADAS
Ingredients:
Cooked and shredded chicken breast
2 tablespoons of oil
1 large tomato
1 clove of garlic
4 green chiles
1/2 sliced onion, cream to taste
12 tostadas
1/2 chopped lettuce
Sliced avocado
Salt to taste
Preparation:
In a skillet with the oil, fry the onion until translucent.
Separately, blend the tomato with the garlic, chiles, and salt.
Strain the mixture and pour it into the skillet with the onion. Let it simmer for 5 minutes over low heat. Add the cream and mix well. Remove from heat.
Cover the tostadas with lettuce and top with some of the mixture. Garnish with avocado.
Serve immediately"

INGREDIENTS:
12 tostadas
2 shredded chicken breasts
1 crumbled queso fresco
2 tablespoons chopped onion
PROCEDURE:
1 shredded lettuce
1 small can of jalapeño pepper strips
salt, as needed.
Fry the tostadas just enough to soften them when heated, then drain.
Top each tostada with cream, chicken, cheese, onion, lettuce, and a few jalapeño pepper strips, and salt to taste. Serve immediately"
